The BISCHOFSLEITEN Lago di Caldaro is an ambassador of its terroir. An unmistakable Schiava crafted from grapes grown on old vines in its own “vigna,” located in a steep vineyard near Lake Kaltern and cultivated using traditional pergola training. The complex bouquet of Amarena cherries, red currants, and violets underline its typicity. The wine is refreshing on the palate and has soft tannins with a hint of almonds. The finish is elegant and fruity.
Manual harvesting and selection of the grapes from the historic Bischofsleiten vineyard (vigna). After destemming, the stainless steel tanks are filled by gravity, followed by mash fermentation under controlled temperature. Malolactic fermentation and ageing for 6 months in stainless steel tanks and used tonneaux (10%).
