Leisenpuiten is an old enclosed vineyard in the middle of Caldaro where downslope winds deliver cool air from the mountains in the evening. The Sauvignon Blanc flourishes in the glacial limestone gravel soil that is lean in part and has a low clay content. Here the grapes mature to produce a wine with a pronounced fruit bouquet of elderflower, gooseberry and ripe yellow peach. On the palate, it has a crisp, fresh acidity and juicy notes. The finish is minerally and long.
Manual harvest and selection of the grapes. Gentle pressing and pre-clarification by sedimentation. Fermentation under controlled temperature in stainless steel tanks with subsequent ageing on the fine lees.
